- 1 lb (450 g) potato gnocchi (store-bought or homemade)
- 1 cup tomato sauce
- 1 cup fresh mozzarella cheese, cubed
- 1/4 cup grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- 2 cloves garlic, minced
- Fresh basil leaves
- Salt and pepper to taste
Instructions:
- Cook Gnocchi: Bring a large pot of salted water to a boil. Cook the gnocchi according to the package instructions or until they float to the surface. Drain and set aside.
- Prepare Sauce: In a large ovenproof skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant. Add the tomato sauce and cook for a few minutes, letting it reduce slightly. Season with salt and pepper to taste.
- Combine: Add the cooked gnocchi to the skillet, stirring to coat them in the sauce. Scatter the fresh mozzarella cubes over the top.
- Bake: Preheat your oven to 400°F (200°C). Sprinkle the grated Parmesan cheese over the gnocchi and transfer the skillet to the oven. Bake for about 10-15 minutes, or until the cheese is melted and bubbly.
- Finish: Remove from the oven and garnish with fresh basil leaves. Serve hot and enjoy!
